You could require the faculty to submit details regarding the class project with a list of their students completing the project. Then, make sure the faculty are educated about specific IRB guidelines, such as the definitions of research and human subjects, special populations, etc. The students can submit details about their project to their professor, who will then determine if any students should apply to the IRB separately. Basically, the faculty get an exemption approval for the classroom project itself (assuming the project deems an exemption), and any students whose project requires further review have to submit to the IRB individually.
