To add to what Charlie and Jennifer said about history of science and the master's thesis--the most useful part of my graduate work (in university admin) has turned out to be the historical and theortical stuff--history of higher ed, orgainizational behavior and theory, sociology of learned professions. Readings in these areas give you a sense of where the uniqueness, value and values of universites come from, and help you see stable patterns where both the daily work flow and the external environment appear to be chaotic.
