I agree with colleagues, David and Lindsey. I have had the experience in working with small community non-profits and the fixed price route worked best for us.

UG 200.333 Fixed Amount Subawards
With prior written approval from the Federal awarding agency, a pass-through entity may provide subawards based on fixed amounts up to the Simplified Acquisition Threshold, provided that the subawards meet the requirements for fixed amount awards in § 200.201.
Currently the Simplified Acquisition Threshold is $250,000. When the revision of UG goes into effect October 1, 2024 the amount goes up to $500,000.

It's been WAY too long since I dabbled in Post-Award, so I'm reaching out for advice:
We have a large federal award, and one of the sub-awards is a small community-based non-profit (one-person shop). This organization has a long-standing relationship with our university, is doing stellar programmatic work, and contributes significantly to the project (i.e., not a consultant/contractor); however, this is their first federal award/subaward, and they don't have a lot of financial savvy. So, I'm struggling between helping the entity handle its subaward and keeping my post-award office, which lives in a "black and white world," happy.
Has anybody "been there, done that" and is willing to talk to me offline?
