When I was responsible for grant accounting (not at my current institution), I was never a big fan of gift cards as human subject incentives because they aren’t fungible and the human subject pool may be smaller
than anticipated. The result is a PI sitting there with a surplus of gift cards, and some sort of cash advance that needs to be reconciled. Usually, that meant they had to come out of pocket and essentially buy the gift cards. Other institutions may differ,
but probably have a very similar approach.
Cash payments or, even better, a check cutting approach is just a lot cleaner in my opinion.
